Go Bananas with Banana Chocolate Chip* Muffins!
Recipe:
½ cup of melted butter but you can also use Vegetable Oil (makes it more moist)
2 Eggs
Sugar to your desired quantity (I usually use about 1/4 cup or less)
3 Mashed Bananas
¼ tsp of Vanilla extract
1 2/3 cup of All Purpose White Flour or whole wheat flour
1 tsp Baking powder
½ tsp of Baking soda
¼ tsp of Salt
¼ tsp of Cinnamon
* This can include Chocolate Chips, raisins, dried apricots or any dried fruit to your desired quantity.
Method:
1) Preheat your oven to 200 degrees.
2) In a small bowl add the chocolate chips and 3 tbsp of flour and mix until all the chocolate chips are coated in the flour
3) In a large bowl add the first 5 ingredients and mix until all are combined.
4) Add the flour and baking soda, baking powder, salt and cinnamon, whisk until all combined.
5) Fold in the chocolate chip and flour mixture.
6) Bake for about 18 minutes.

Note: Alternatively if you have a machine whisk out, put in the wet ingredients, whisk on setting 1, then add the floury ingredients and chocolates or dried fruit. For those who don’t have chocolate chips whacking a chocolate bar to bits won’t do any harm either. You will now end up with a mushy banana-flour batter with bits of your chocolates or fruits inside. The end result will be a more marshmallowy textured, ultra soft muffin that even a very young child can spoon into his mouth with ease.
