Cooking with Aunty D.


An age old recipe that’s an absolute Lankan favourite. Not as sophisticated as your everyday wine, but thambili wine is bound your mind. Here’s how it’s made.

Prep time: 30 min

Leave aside for: 4 weeks

Ingredients:

  • King coconut 2
  • Yeast 2 tbsp
  • Sugar 500g
  • Cardamom 5
  • Clove 5
  • Nut meg 1Tsp

Method:

  1. Strain the king coconut, adding sugar during the process.
  2. Add cloves, cardamom, yeast and strain well.
  3. Pour into a glass bottle and leave aside for 3 weeks. DO NOT TIGHTEN LID.
  4. After 3 weeks, strain it using filter paper.
  5. Leave it aside one more week.
