Simply Cook – Looking by Azma
A one wok wonder all the way from Thailand! Flavorful seafood that goes great with rice or noodles.
- 50g tamarind paste
- 2/3 cup boiling water
- 2tbsp vegetable oil
- 2 tbsp chopped onion
- 2 tbsp palm sugar
- 2 tbsp chicken stock
- 1 tbsp fish sauce
- 6 dried red chilies fried
- 450g uncooked shelled prawns
- 1 tbsp fried chopped garlic
- 2 tbsp fried sliced onions/shallots
- spring onions and coriander to garnish
Put the tamarind paste in a small bowl and pour boiling water over it. Stir well. Set aside.
Heat oil in a wok. Add the chopped onion and fry until golden brown.
Add the sugar, stock, fish sauce, dried chilies and the tamarind juice stirring well until the sugar dissolves. Bring to the boil.
Add the prawns, garlic and onion/shallots. Stir fry until the prawns are cooked about 3-4 minutes. Garnish with spring onions and coriander.
