Sri Lankan Maalu Ambulthiyal (Fish Curry)

A fish curry with a truly exotic Lankan twist. Fish Ambulthiyal is a recipe from the villages that dates back to decades. The black curry fish is the cherry on top on any Sri Lankan family lunch or dinner.

Prep time: 2 hours

Ingredients:

  • Fish 500g
  • Black Pepper 5tsp
  • Garcinia (Goraka) 5pcs
  • Clove 3pcs
  • Cardamom 3
  • Garlic 5 cloves
  • Ginger ½ inch
  • Water 3 cups
  • Curry Leaves
  • Pandan Leaves (Rampa)

Method:

  1. Blend the goraka, black pepper, cardamom, garlic, clove, ginger and 1/2 the curry leaves with 1 cup of water.
  2. Place the pieces of fish in a clay pot.
  3. Add in the blended spices.
  4. Add 2 cups of water.
  5. Allow it to boil.
  6. Reduce the flame and close it with a lid.

Cook until the gravy thickens and eventually simmers down.
