Seven Vegetable Curry Recipe

This Hathmaluwa Curry will surely make your meals a whole lot better! Subha Aluth Avurudak!

Ingredients:

  • Potato (medium) 1
  • Dhal 50 g
  • Cashew nuts 50 g
  • Carrots 50 g
  • Long beans 50 g
  • Brinjal 50 g
  • Jack fruit seeds 10
  • Oil 2 tsp
  • Onion (small) 1
  • Curry leaves & rampa
  • Garlic 4 cloves
  • Turmeric powder 1/4 tsp
  • Curry powder 1 tsp
  • Chilli powder 1 tsp
  • Salt 1/3 tsp
  • Green chillies 2
  • Chilli flakes 1/2 tsp
  • Coconut milk 2 cups 

Method:

  1. Heat oil and add onion, rampa, curry leaves, garlic, and turmeric powder. Fry until onion becomes golden in colour.
  2. Add potato, jack fruit seeds, cashew nuts, carrots, long beans, brinjal and dhal. Then add curry powder, chilli powder, salt, green chillies and chilli flakes.
  3. Add coconut milk. Cover with the lid and cook.
