Tasty and and easy to make, pair this Potato and Beans curry with a plate of steamed rice for a perfectly satisfying meal!
Ingredients:
Potato 200g
Green Beans 150g
Onion 1 small
Garlic 3 cloves
Green Chili 1
Fenugreek 1/4 tsp
Curry Powder 1/2 tsp
Salt 1/2 tsp
Chili Powder 1/4 tsp
Turmeric Powder 1/4 tsp
Maggi Coconut Milk 1 cup (thick) – 1 cup water + 2 tbsp Maggi Coconut Milk Powder
Maggi Coconut Milk 2 cups (light) – 1 cup water + 1 tbsp Maggi Coconut Milk Powder
Curry Leaves
Method:
1. Wash and cut beans, peel and cut the potatoes into cubes
2. Place in a cooking pot and add onion, garlic, green chilli, fenugreek, curry powder, curry leaves, salt, chilli powder, turmeric powder and add the Maggi light coconut milk. Cook until the gravy is dissolved.
3. Add Maggi thick coconut milk and continue stirring
4. Garnish with fried onions.
