Love Cake

This year, Valentine’s Day is all about that #LoveCakeLove! 

A truly Sri Lankan recipe and sweet, Love Cake is an absolute delight! Check out our very own Love Cake recipe below.

Ingredients:

  • Semolina 125g
  • Margarine 125g
  • Rind of 2 limes
  • Pumpkin 75g
  • Minced cashews 125g
  • Rose essence 1 tsp
  • Sugar 200g
  • Minced pumpkin preserve 75g
  • Eggs yolks 5
  • Vanilla essence 1 ½ tsp
  • Almond essence 1 tsp

Method:

  1. Warm semolina in a dry pan until golden brown.
  2. Switch off the flame and add margarine and lime rinds while it is still hot.
  3. Add minced pumpkin, cashew, and rose essence.
  4. Keep overnight.
  5. Beat the egg yolks with sugar. Add vanilla essence and almond essence.
  6. Beat the egg whites and fold into the mixture,
  7. Bake at 150° for 40 – 45 minutes
