Cooking with Aunty D.
A mixed rice dish from India that’s taken our hearts away. Biriyani is a traditional dish that brings joy to your table. It’s both a middle eastern and an Indian dish, whichever way you decide to make it, it’s definitely a standout dish on the lunch table!
Ingredients:
- Chicken 500g
- Basmathi Rice 500g
- Biriyani mix 1/2 packet
- Ginger 1tbsp
- Garlic 1tbsp
- Curd 2tsp
- Yogurt 1
- Onion 1
- Tomato 2
- Oil
- Prunes
- Cashew nuts
- Curry leaves
- Dried prunes
Method:
- Add the biriyani mix into the chicken along with ground ginger and garlic, curd, yogurt. Mix well and leave it for 30 min to marinate.
- Heat oil and add onions intro it and let it fry until it turns golden brown. Add chopped tomatoes and the marinated chicken.
- Let it cook for 20 min.
- Heat the oil and fry the cashew nuts until it turns golden brown along with the curry leaves and plums.
- Mix pre-cooked basmathi rice with the chicken.
- Add a pinch of pink and green food colouring to a few rice grains and mix it with the biriyani.
- Garnish the dish with fried cashew nuts, prunes and coriander leaves.
