Easy Egg Muffins

Jazz your breakfast up with this all in one healthy meal in a paper cup. This versatile, easy bite contains all the proteins, veg. and calcium you need to kick-start your day off just right, so what are you waiting for? Read on, and dig in!

Ingredients:
 
Veggies of your choice (pictured: contains sliced spinach, chopped coriander, chopped bell peppers, diced tomatoes and sliced onions)
3 Large Eggs
1 tbsp butter
1/2 tsp baking powder
1/2 cup milk
Salt
Pepper
Mozzarella Cheese
Parmesan (optional) (any cheese will do, even grated cheddar) 
Muffin cups
 
Method:
 
Pre-heat oven to 180’C. Mix veggies of your choice together. Add 3 eggs into a bowl with butter, milk, baking powder, salt and pepper. Beat well. Assemble 3 large muffin cups. Layer them with veggies, then cheeses and finally pour in the egg mix leaving room on top for the mix to rise. Place in oven for 25 minutes. Check that it is well done and remove. Cool for 5 minutes and enjoy! For a little heat you can pour some hot sauce on top and then dig in 🙂
