Ever craved this Sri Lankan favorite before but just don’t have time to stand over the stove stirring forever? Try this quick 10 minute sweet, fudgy milk toffee fix, and add some dried fruit and nuts of your choice in to elevate that already incredible flavor, and impress all of your family and friends too!
1 can Sweetened Condensed Milk (395g)
1/4 cup Butter
1 cup Sugar
Pinch of Salt
Chopped Nuts of your choice
Dried Fruit of your choice
1 Tbsp. Vanilla
In a fairly large or tall microwaveable bowl, put in condensed milk, butter, sugar and pinch of salt. Set microwave to high power and on the 10 minute mark. Microwave for 4 minutes. Stop, stir and put in nuts and dried fruit. Microwave for a further 4 minutes. Be very careful of high heat and the condensed milk and sugar mix rising up in the bowl. Remove from microwave with 2 minutes to go and add the vanilla. Stir.. Microwave until done. It will be a darker golden brown and solidifying. Pour contents into a dish lined with baking paper. Smooth down and let it set at room temperature. Halfway through, when still warm, cut into squares of desired size. Once cool, break apart, sit back and try not to finish it all off!
