Vegetable Roti | Cooking with Aunty D

Ingredients: 

All-Purpose Flour 2 cups

Baking Soda 1/8 tsp

Salt 1 1/2 tsp

Water 3/4 cups

Oil 1 tbsp

Oil 1 tbsp (To fry)

Garlic 3 cloves

Curry Leaves

Cardamon 2 pods

Bombay Onion 1 large

Green peas 1/2 cups

Carrot 1/2 cups

Leeks 1/2 cups

Boiled Potatoes 200g

Chilli Powder 1/2 tsp

Curry Powder 1 tsp

Pepper 1 tsp

Chilli Flakes 1 tsp

Turmeric Powder 1/4 tsp

Method: 

Add all-purpose flour into a bowl followed by baking soda, salt, water, oil and mix well.

Let the dough rest for 2 hours.

Break dough into equal balls, apply oil and let it rest again for 2 hours.

Add oil into a pan followed by garlic, curry leaves, cardamoms, bombay onion, green peas, carrot, leeks, boiled potatoes, chilli powder, curry powder, pepper, chilli flakes, turmeric powder, salt and stir well until cooked.

Flatten each dough ball, add the potato mix and wrap in the shape of a triangle.

Finally, pan-fry the vegetable roti until the outside is slightly brown.
