Rich Cake | Cooking with Aunty D

Semolina 225 g

Soft Sugar 200 g

Butter 225 g

Raisins 150 g

Sultanas 150 g

Pumpkin Preserve 150 g

Chow Chow Preserve 150 g

Ginger Preserve 150 g

Strawberry Jam 1 tbsp

Candied Peel 50 g

Cherries 150 g

Cashew 200 g

Mixed Spices 1/2 tsp

Brandy 1/3 cup

Bees Honey 1 tbsp

Vanilla Essence 1/2 tbsp

Almond Essence 1/2 tbsp

Rose Essence 1/2 tbsp

Grated Rind of Lime 1 tsp

Flour 30 g

Egg Yolks 6

Egg whites 3



Add Sultanas, raisins, Chow chow preserves, candied peel, plums, cashews, cherries, ginger preserves, pumpkin preserves, mixed spices, vanilla essence, almond essence, rose essence, strawberry jam, honey and brandy into a bowl.

Mix all the ingredients together and set aside.

Add butter to a bowl of warm semolina and mix.

Blend egg yolks together, and add in soft sugar and grated rind of lime.

Next, add flour to the berry mixture that was set aside and give it a good mix.

Proceed to pour the semolina mixture in the egg yolk mixture and mix once again.

Transfer the berry mixture into the semolina and egg yolk mixture and mix until all ingredients are well combined.

Add in beaten egg whites and fold in eggs into the mixture.

Finally, transfer the mixture into a lined baking tray and pop it into the oven for 60 minutes at 150C.
