Mixed Vegetable Rice

As Lankans we will always have a soft-spot for a mouth-watering meal of rice. Moreover, we also need to eat our fair share of veggies in order to stay healthy. Here’s a recipe that lets you enjoy both! It’s easy to cook and an all time family favourite. Happy cooking! 

Ingredients:

  • Fortune Basmati Rice 250g
  • Olive Oil 2 tsp
  • Onion 1
  • Garlic 4 cloves
  • Cumin Seeds 1/2 tsp
  • Young Corn 50g
  • Cauliflour 100g
  • Brocolli 100g
  • Carrot 50g
  • Bell Pepper 50g
  • Salt 1 1/2tsp
  • Pepper 1/2tsp

Method:

  1. Wash and drain Fortune Basmati Rice.
  2. Soak for 15 minutes.
  3. Heat olive oil and add onion, cumin seeds and garlic.
  4. Mix the washed rice and salt. Cook 3-4 minutes then add water.
  5. Boil young corn, brocolli and cauliflour.
  6. Heat oil and add chopped onion. Add carrot, young corn, brocolli, cauliflour and bell pepper.
  7. Add salt and pepper.
  8. Mix the rice with the vegetables and serve
