As Lankans we will always have a soft-spot for a mouth-watering meal of rice. Moreover, we also need to eat our fair share of veggies in order to stay healthy. Here’s a recipe that lets you enjoy both! It’s easy to cook and an all time family favourite. Happy cooking!
Ingredients:
- Fortune Basmati Rice 250g
- Olive Oil 2 tsp
- Onion 1
- Garlic 4 cloves
- Cumin Seeds 1/2 tsp
- Young Corn 50g
- Cauliflour 100g
- Brocolli 100g
- Carrot 50g
- Bell Pepper 50g
- Salt 1 1/2tsp
- Pepper 1/2tsp
Method:
- Wash and drain Fortune Basmati Rice.
- Soak for 15 minutes.
- Heat olive oil and add onion, cumin seeds and garlic.
- Mix the washed rice and salt. Cook 3-4 minutes then add water.
- Boil young corn, brocolli and cauliflour.
- Heat oil and add chopped onion. Add carrot, young corn, brocolli, cauliflour and bell pepper.
- Add salt and pepper.
- Mix the rice with the vegetables and serve
