Date Cake

Date Cake is a delicious favourite if you’ve got a sweet tooth, so here’s an easy recipe!


• Dates 225g
• Hot milk ½ cup
• Bicarbonate soda ½ tsp
• MeadowLea Fat Spread 250g
• Sugar 200g
• Eggs 3
• Vanilla 1 ½ tsp
• Almond essence 4 drops
• Cashew nuts 150g
• Dates 225g
• Flour 200g
• Baking powder 1 ½ tsp


1. Add ½ cup of hot milk and ½ tsp of bicarbonate soda to chopped dates and leave aside for half an hour.
2. Cream the sugar and MeadowLea Fat Spread together.
3. Add eggs, flavouring, and beat this until the sugar dissolves.
4. Then add cashew nuts and chopped dates. Mix well.
5. Then add flour. Fold the mixture and bake at 175° for over 20 minutes. Reduce the heat to 150° and bake for another 10-15 minutes.
