Pol Cake | Cooking with Aunty D

Desiccated Coconut 500g

Coconut Treacle 1 1/2 cups

Sugar 1/2 cups

Raisins 1/4 cups

Cashews 1/4 cups

Dates 1/2 cups

Roasted Semolina 1/2 cups

Lime 2 zest

Salt 1/4 tsp

Vanilla 1 tsp

Baking Powder 1/4 tsp

Cardamom Powder 1/2 tsp

Baking Soda 1/4 tsp

Sweet Cumin 1/2 tsp

7 Star Cake Flour 2 cups


Add desiccated coconut into a pan followed by coconut treacle and sugar. Mix well into a paste and let it simmer over the heat.

Remove pan from the heat and add, raisins, cashews, dates, roasted semolina, lime, salt, vanilla, baking powder, cardamom powder, baking soda, sweet cumin and mix well.

Add 7 Star Cake Flour into the paste and mix well.

Add the pol cake paste on to a baking tray, spread evenly and sprinkle cashews on top of the paste.

Bake for 40 – 45 minutes at 180° and remove from the oven once done.
