Pre-heat oven to 120’C. Lightly beat the egg white until frothy. Add the water, and beat again on medium until frothy but not stiff. Add the nuts, and shake them in this egg white mix. Mix the white sugar, brown sugar, and salt. Toss the nuts in and shake to coat. Pour in the almond and vanilla essences. Now cover the oven tray with a baking sheet and spread the coated nuts evenly over the pan so they are in a single layer.
Bake for 1 hour, turning through occasionally. They are done when they lose their stickiness and are dry but coated in sugary scented godness. Remove from pan and enjoy warm or store in an airtight container and snack on them whenever you please! These last for a month or two in a cool, dry place.
